BEFORE FIRST USE

Before using your rotisserie for the first time, wash all removable food-contact components with warm water and mild dish soap. Rinse thoroughly and dry completely.

Inspect the rotisserie spit, forks, brackets, motor, and mounting hardware to ensure all components are properly installed and securely tightened.

USING THE ROTISSERIE

1. Prepare the Fire
   Build your wood or charcoal fire and allow it to establish a consistent heat before cooking. Arrange the fuel to provide the desired amount of direct or indirect heat.
2. Secure the Food
   Center the food on the rotisserie spit to keep the load as balanced as possible. Insert the rotisserie forks firmly into the food and securely tighten them before placing the spit on the grill.
3. Check Clearance
   Before starting the motor, rotate the spit by hand to make sure the food clears the grill, firebox, and surrounding components throughout a complete rotation.
4. Install the Spit
   Place the loaded spit securely into the rotisserie brackets and connect it to the motor according to the rotisserie configuration.
5. Start the Rotisserie
   Turn on the motor and confirm that the spit rotates smoothly and evenly. If the food rotates unevenly or places excessive strain on the motor, stop operation and rebalance the load.
6. Control the Heat
   Use the adjustable height of the Santa Maria-style grill and manage the fire to control cooking temperature. Avoid excessive flames or flare-ups directly beneath the food.
7. Monitor While Cooking
   Never leave an operating rotisserie or live fire unattended. Periodically check the fire, food position, spit forks, and rotation during cooking.
8. Removing Food
   Turn off and disconnect the rotisserie motor before removing the spit. Use heat-resistant barbecue gloves when handling the spit, forks, brackets, or other hot components.

IMPORTANT SAFETY

The rotisserie spit, forks, grill surfaces, and surrounding metal components become extremely hot during use. Do not touch hot surfaces with bare hands.

Keep children and pets away from the grill while it is operating or cooling.

Do not exceed the rotisserie motor's specified weight capacity. Always distribute and balance food evenly on the spit.

Keep electrical cords and the rotisserie motor away from open flames, hot surfaces, water, and areas where grease may accumulate.

For outdoor use only. Do not operate the grill or rotisserie in an enclosed area.

CLEANING & CARE

Allow all components to cool completely before cleaning.

Remove the spit rod, forks, and other removable food-contact components. Wash with warm water, mild dish soap, and a non-abrasive sponge or cloth. Rinse thoroughly and dry immediately.

For stubborn grease or food residue, soak removable stainless-steel components in warm soapy water before cleaning. Avoid abrasive cleaners, steel wool, or harsh chemicals that may damage the finish.

Do not immerse the rotisserie motor, electrical cord, plug, or other electrical components in water. Wipe the exterior of the motor with a slightly damp cloth and dry thoroughly.

Periodically inspect mounting brackets, fasteners, spit forks, and other hardware. Tighten loose components as necessary and replace damaged or excessively worn parts before use.

STORAGE

Make sure all rotisserie components are clean and completely dry before storage.

Store removable components in a clean, dry location. When the grill is not in use, protect the rotisserie motor and electrical components from rain, moisture, and prolonged exposure to the elements.

Proper cleaning, balancing, and storage will help maintain smooth rotisserie operation and extend the life of your equipment.
