Ingredients:
- Fiesta Rub
- Monterey Jack Cheese
- Torilla Strips
- 1.5lb Ground Beef (will make 4 patties)
- 4 Slices of Applewood Smoked Bacon
- Avocado Slices
- 1 small can of Hatch Green Chilis
Smokey Chili Lime Mayo
- ½ cup Mayonnaise
- 2tsp Blackening Rub
- 2tsp Chili Lime Rub
- 2tsp Lime Juice
- Pinch of Salt
Instructions:
1. Mix up 1/2 cup mayonnaise, Blackening Rub, Chili Lime Rub, Lime Juice, and salt in a side container for the Smokey Chili Lime Mayo – let sit a couple of hours (I like to let sit for the flavors to break down, this is just recommended)
2. Cook 4 slices of bacon and chop into half-inch bits
3. Make patties seasoned with Fiesta Rub and Cook how you like
4. Before pulling the burgers add a spoonful of Hatch green chilis and Monterey Jack Cheese to melt
5. Add Smokey Chili Lime Mayo to the bun, bacon, avocado slices, tortilla strips, and the burger with poblano and melted cheese.
