Grill
Prep your grill to have an indirect heat side. Heat to 275-300
Prep
In a bowl add ground beef, diced jalapeños, egg, panko breadcrumbs, and 2 tbsp Lane’s Chili Lime Rub. Make your meatballs and make a slight bowl shape to hold the pimento cheese, then close the ball around the cheese. Season with Lane’s Chili Lime.
Cook
Place meatballs on the grill for 30-45min checking temperature. 150 is your target temp to pull the meatballs and brush with Kinda Sweet. Place back on the grill until they reach 155 degrees.
Pull and Enjoy!
If you have never had a juicy lucy this has to be the next best thing! These meatballs will blow your mind when you taste how good they are. Everyone loves a good cheeseburger, right? These are just bite-sized cheeseburgers made with your favorite pimento cheese and topped with Lane’s Kinda Sweet BBQ sauce. Yum!!!
Ingredients:
- Lane’s Chili Lime Seasoning
- Lane’s Kinda Sweet BBQ Sauce
- Pimento Cheese (pick your favorite)
- 1 egg
- 1/2 cup Panko Breadcrumbs
- 1 1/2 lb Ground beef – 85/15
- 1-2 diced jalapenos
Instructions:
1. Setup grill/smoker – on grill place chunks/coals on one side – heat to around 275-300
2. In a bowl add ground beef, diced jalapeños, egg, panko breadcrumbs, and 2 tbsp Lane’s Chili Lime Rub
3. Mix all together and make meatballs about 2 inches diameter – push thumb in the middle of the meatball and pull out to create a bowl shape.
4. Add a scoop of your favorite pimento cheese and close the meatball around the pimento cheese
5. Season the outside of the meatballs with Chili Lime Rub
6. Optional place a handful of cherry chips over chunks/coals when you are ready to place meatballs on.
7. Place meatballs on the side of the grill without the coals for indirect firing. If using a ceramic just place the meatballs on grate.
8. Cook for about 30-45 minutes or until internal temp reaches 150
9. Brush Lane’s Kinda sweet BBQ sauce on meatballs and cook for another 10 minutes until internal temp reaches 155
Recipe Note
1. **You could kick it up a notch with our Lil Spicy Sauce on top! Or you could get a spicy pimento cheese.
2. ** If you like this reciepe as meatballs you can make bigger meatballs and turn them into patties, instant cheesebugers!
