Ingredients:

Choose a Brine

  • Lane’s Signature Brine
  • Lane’s Big Dill Pickle Brine
  • Lane’s Big Dill Pickle Brine + Nashville Hot Brining Kit

Instructions:

Brine the wings

1. In a large container add ½ cup of Signature Brine or Big Dill Pickle Brine, 8 cups of water, and a half a cup of pickle juice. Mix solution.

2. Add 1 pack of chicken wings to the solution and make sure it is fully submerged. Place in refrigerator overnight (12-16 hours)

3. Once you are done brining, pull wings from solution and pat dry. **Optional – for a crispier skin allow the wings to air dry uncovered in the fridge to dry the skin out.

Smoking the wings

1. Set your grill to 250 – 300 and use a chunk of your favorite smoking wood – we like Cherry

2. Season all sides of the wings with Lane’s Nashville Hot Seasoning.

3. Place on the grill, skin side down, and cook to an internal temperature of 190 (flipping occasionally to not char the wings too much)

4. In a large bowl, add a half cup of Sorta White and a half cup of One Legged Chicken, toss wings in sauce until fully coated and put back on the grill for another 5 – 10 minutes. Internal temp you are going for is 198-200 – pull and enjoy!

5. Optional – Dice up some pickles and toss them on top of the wings to complete the Nashville Hot feel

Recipe Note

1. For a quick slaw to go with the meal – grab a bag of shredded cabbage, add 1/2 cup to a cup of sorta white, diced pickles, and season with a bit of Nashville hot and mix.

2. Air drying in the fridge is optional, but definitely recommended if you like the crispy wing skin
