Instructions:

1. Slice tomatoes into ¼” to ½” thick discs and soak in a mixture of buttermilk and One Legged Chicken sauce for 30 minutes up to 2 hours in the refrigerator.

2. In a large bowl, mix together cornmeal and ¼ cup Signature Rub. Take tomato slices directly from the buttermilk mixture and coat them thoroughly in the cornmeal breading.

3. In oil preheated to 350°F, fry the tomatoes for 4-5 minutes, flipping occasionally until the coating is golden brown. Allow to drain on a cooling rack and cool for a few minutes before serving.

4. Enjoy on their own with some Sorta White sauce, or on a classic BLT!

Recipe Note

1. Rubs like Cubano, Spellbound Hot, and Garlic2 are great to use in place of Signature.
2. These make an awesome topping for burgers!
