Ingredients:
- Lane’s Spellbound Hot Rub
- 2 Lobster Tails
- 1 lemon
- 1 stick of Butter
- 4 Top split hot dog buns
- 1 tsp Minced Garlic
- Chives
Instructions:
Smoke The Lobster Tails
1. Cut along the top of the shell – body end down to the tail (leave the end of the tail uncut) – Flip the lobster tail over. Using your thumbs carefully crack the segments down to the tail area. Flip and carefully pull the shell apart at the incision, pull the lobster meat out (leaving connected the end of the tail), and place the lobster meat on top of the shell. 2. Season the lobster meat with Spellbound Hot Rub and place a pat of butter on top
3. Bring Smoker up to 300 degrees – We use Cherry wood for our smoke flavor. Place lobster on the smoker and smoke for 15 to 20 minutes until the internal temperature is 130. **Very important not to overcook the lobster tail
4. **Optionally – you can get pre-packaged lobster meat and heat it in a skillet with butter or smoke it in a skillet on the smoker.
Making the lobster Roll
1. In a small pot melt the rest of the stick of butter, 1 tsp minced garlic, and half of a lemon juiced.
2. Chop lobster meat into 1 – 2 inch bits (your preference) and fill the top split hot dog buns. (Should fill around 4 buns) Pour over the butter mixture, lightly season with Spellbound Hot, squeeze of lemon, and diced chives. Enjoy
