This Spinach, Arugula, and Strawberry Salad is one of my go-to recipes when I want something light but packed with flavor. It’s got everything you want in a summer salad. And of course, no salad’s complete without a little crunch, so we’re finishing this one off with a sprinkle of Dan-O’s Crunchy Seasoning. Whether you’re serving it at a cookout, pairing it with grilled chicken, or just want a quick, healthy lunch, this one’s gonna be your new favorite salad.
Ingredients:
Salad Base
- 1 tbsp Dan-O’s Crunchy Seasoning
- 5 oz baby spinach
- 5 oz baby arugula
- 1/2 small red onion, thinly sliced
- ½ lb Fresh strawberries, tops removed and thinly sliced
- 5 oz goat cheese, crumbled (or to taste)
Chili Lime Balsamic Vinaigrette
- 2 tbsp Dan-O’s Chili Lime Seasoning
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1½–2 tbsp spicy brown mustard
- 2 tbsp pure honey
- Juice of 1 small lemon (or ½ of a large lemon, strained)
Instructions:
1. Make the Dressing: Combine olive oil, balsamic vinegar, mustard, honey, lemon juice, and Chili Lime Seasoning in a shaker or jar. Shake well until smooth.
2. Prep the Veggies: Thinly slice the red onion and strawberries.
3. Toss the Salad: In a large bowl, combine spinach and arugula. Pour in most of the vinaigrette and toss until evenly coated.
4. Assemble: Top with onions, strawberries, and goat cheese.
5. Finish & Serve: Drizzle remaining vinaigrette and sprinkle with Dan-O’s Crunchy Seasoning. Serve fresh and enjoy! Yum Yum Get Ya Sum!
