Spicy Corn Fritters are the ultimate way to turn corn into crispy, golden bites of pure flavor chaos. Packed with kernels that pop (in a good way) and a kick of spice that’ll have you reaching for a second… or third… or tenth, these fritters are the life of the party. Need a little extra zing? Toss in some Dan-O’s Spicy Seasoning for that perfect blend of flavor and fire. Dip ’em, stack ’em, or eat ’em straight outta the pan — just be prepared to fight for the last one!
Serve this alongside some Smoked Wings or just eat em as a snack!
Ingredients:
- 1 tsp Dan-O’s Chipotle Seasoning
- 1 tsp Dan-O’s Tac-O Seasoning (or just use more Chipotle or Spicy for an extra kick)
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1 large egg, lightly beaten
- 1/2 cup water
- 2 cups of corn kernels, can be frozen corn (thawed and drained)
- 1/2 cup green onions, finely sliced
- 1/4 cup chopped cilantro
- cooking oil, for frying
- sour cream or garlic aioli, for serving
Instructions:
1. Make the batter: In a bowl, whisk together the flour, baking powder, and Dan-O’s. Add the egg and water and stir vigorously with a wooden spoon until smooth. Add the corn, scallions, and cilantro. Stir until just combined.
2. Fry the corn fritters: Coat the bottom of a large sauté pan with cooking oil and place it over medium-high heat. When oil is hot, spoon about 2 heaping tablespoons of fritter batter into the pan to form one fritter, spreading out into a flat circle. Leave about 1/2 inch between the fritters in the pan.
3. Cook for about 2 to 3 minutes on each side. Transfer to a paper towel-lined plate. Repeat the cooking process with the rest of the batter, adding more oil to the pan when needed.
4. Serve with a sour cream or aioli-style dip or a sweet chili sauce. Whatever floats your boat!
